2 Time Chili Champion

Wild Bill's Award Winning Chili

I won my second chili cook-off!

On March 6th, 2006 I entered my first chili contest. I won that contest and the bragging rights to say, “I am an award winning chili champion.”

My mom told me that her church was having a chili contest so I decided to try my luck and see if I could bring home another win. I made a few slight changes to my award winning recipe, cooked my chili, and put it in the refrigerator so that the flavors would blend together and make the perfect bowl of chili.

Here is my new revised chili recipe:

  • 1 med onion (chopped)
  • 1 red bell pepper (chopped)
  • 2 pounds ground chili meat
  • 1 pound ground sausage
  • 2 Table spoons Worcestershire sauce
  • 1 teaspoon black pepper
  • 3 Table spoons minced garlic
  • 1 10oz can milder or regular Rotel
  • 1 15oz can Hunt’s seasoned diced tomato sauce for chili
  • 1 8oz can tomato sauce
  • 1 packet “Old Hammett Chili Seasoning*
  • 1 cup beef broth

Add chili meat, sausage, onion, green pepper, Worcestershire sauce, black pepper, and garlic to a BIG pot. Cook until meat is browned. Drain fat (got to watch our figures.) Return meat to pot, add remaining ingredients and simmer covered for 30-45 minutes. Serve and eat. For best flavor put in refrigerator over night.

We dropped off the chili 30 minutes before the tasting began, then we headed off to the hospital to check on my dad. When we showed back up at the church to see how the chili contest was going I was a little worried because none of my chili was left. This turned out to be a good thing. After the judging had finished the judges finished off most of my chili and the rest of the people that showed up to sample the 10 to 15 chili’s that had entered the contest made quick work of what was left. When they made the announcement that I had won I was a little surprised. We won a $20 gift certificate to eat dinner at Chili’s and I can now say I am a 2 time Chili champion. It might be time for me to try my hand at a bigger chili cook-off.

If I had known about this Chili cook-off earlier I would have entered, but I don’t have time to get the ingredients, cook, and let the chili sit in the refrigerator long enough to get that winning flavor. I’ll be looking for a cook-off to enter. Hopefully I can pull off a chili trifecta.

  2. Hi Bill, was wondering if you might have an extra spice or herb that can be used in my chili cook off contest. my recipe takes a couple of days but want an extra edge to it.

    what i do is take beef roast, use a meat syringe and inject it with a bunch of spices and mixtures.

    ground fresh basil, paprika, chili peppers, chili pepper, black pepper, salt, garlic, sundried tomato paste, cummin, brown sugar, worcestire sauce, touch of vinegar, and some extras wisked together with water and olive oil.

    everything together injected into the roast and cooked in a crock pot till fully cooked ( slow 8 hours ) then i put it thru a meat grinder ( mincer ) with some cooked lamb and pork.

    for vegetables i bbq corn while on the cob till its charred a bit then removed and added to the chili. fresh onion and chives with a can of heinz bean medley mitxure, red kidney beans and then add fresh sweet peppers and capers put into a crock pot on low for 6 hours then served the next day.

    I usually win the contest but hard to compete against really spicy chili with chunks of pineapple to offset the hot spice.

    i prefer mine as original and hold the extra spices as a secret, but do you know of anything else that can be done to put my chili over the top to win my upcoming contest on july20th/07 as would like the bragging right again.
