Wild Bill's Pork Butt

My wife loves my pulled pork, so that’s what she is getting tonight. Actually everyone that has tried my pulled pork keeps coming back for more. If you like pulled pork you have to try this recipe. So by popular demand I am giving out my secret to perfectly pulled pork. I can smell my pork butt roasting right now.

*This recipe makes a lot of food so invite your friends over to help pull your pork and enjoy your pulled pork.

Wild Bill’s Pulled Pork

Ingredients:

  • Pork Butt Roast
  • 2 tablespoons paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon celery salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion power
  • 1/2 teaspoon ground black pepper
  • 36oz bottle Head Country Bar-B-Q Sauce or use your favorite BBQ sauce

Directions

  • In a small bowl, mix paprika, brown sugar, celery salt, garlic powder, onion powder, and ground black pepper. Rub spices all over your butt. Wrap in plastic wrap, and put in the refrigerator 8 hours, or overnight so that the spice rub will flavor your butt.
  • 2 different cooking methods.
  1. Best cooking method. Prepare your Weber grill for indirect heat. Sprinkle a handful of soaked wood over Kingsford coals. Place pork butt roast on the grate over a drip pan. Cover grill, and cook pork at least 6 hours, or until the internal temperature reaches a minimum of 195 degrees F. Check hourly, adding fresh coals and hickory chips as necessary to maintain heat and smoke.
  2. Alternative cooking method. Preheat your oven to 325 degrees. Wrap your butt tightly with Heavy Duty Reynolds Wrap. Place butt in oven above a drip pan (just in case your butt drips.) Cook for 4-6 hours or until the internal temperature reaches a minimum of 195 degrees F. Cook for at least 2 hours before checking internal temperature.

  • Remove pork butt from heat and place on a cutting board. Allow the meat to cool approximately 15 minutes, then pull your pork into bite-sized pieces using two forks. Pulling pork takes time, but your patience will pay off.
  • Pour almost the entire 36oz bottle of Head Country BBQ Sauce on your pulled pork (save some sauce in case you want to pour some directly onto your portion of the pork.) Toss your pork to coat all of your pork with BBQ sauce.
  • Serve as is or put your pork on hamburger buns for a yummie pulled pork sandwich.
